Believe me, I’ve been there. I was asking myself all of the questions above. I get it. A few years back, I was feeling like my life was spinning out of control. I went from being in a great job, feeling fit and confident, to losing sight of myself, gaining 30 lbs and struggling to make ends meet financially. When I looked at a photo of myself while on a study trip to Burgundy, I didn't recognize that woman staring back at me.

I was also tired of not feeling in alignment with my values, knowing I was meant for so much more and I didn't want to feel depressed about living below my potential. I couldn't be satisfied with, "That's just how life is, we just do the best we can." when I questioned how things were. NO!

I went through a period of time in my life where I neglected myself and lived for everyone else. Prioritizing myself seemed like a foreign concept, (there was just never enough time!) and every situation I was going through just seemed out of my control. Work demanded x hours of my time, then I needed to clean the house, devote time to running errands, take care of the dogs (my furry children) and pay bills. Meanwhile I wondered, how do people find time to do anything else?? As a result, I often turned to comfort foods, and one too many glasses of wine on a regular basis. It was the only time I could “relax”. That glass of Chardonnay and piece of cheese was always there for me, and was my “permission” to slow down and do nothing for a minute.
 
The problem was, it only worked for about an hour or two. When I woke up the next morning, my problems were still there. I was still not feeling inspired or full of energy, and not at all fulfilled in what I was doing with my life at the time. So the cycle continued.
 
Until one day, when I finally had an ‘aha’ moment and found the connection between my (crappy) diet and how I was feeling. Besides having gained weight and fallen out of shape, I was not happy in other areas of my life either. Something was missing, and I was trying to fill that gap with food and wine.

One afternoon, after having cried about watching yet another video about animals being abused and mistreated in the factory farming industry, I decided enough was enough. I could no longer look at myself in the mirror with a straight face saying I was an "animal lover" and still eat meat. So I decided to go vegan, and it happened pretty much overnight. The positive changes that started unfolding in all areas of my life after I made that decision is nothing short of astounding, and all the amazing things as a result of me adopting a plant based diet became the catalyst and reason for why this program was created.

When I finally adopted a vegan lifestyle, where being gentle and kind is at the center, a miracle started to happen. Not only did I drop weight without much effort, but my skin cleared up (I started getting a ton of compliments about it) and my energy went through the roof. Even more surprisingly, I began feeling compassion not just about other people and beings around me, but most importantly – about myself. I started respecting myself, realizing my worth and value as a human being. All of a sudden I wanted to be kind to my body who, for so many years, despite me beating it up with the wrong foods, tried so hard to keep me healthy. I finally wanted to be friends with my body. I saw that the only way I was going to reach my goals, was if I took care of myself. I couldn’t give what I, myself, hadn’t been able to receive. I experienced nothing short of a transformational life experience. 

So why do we continue to make the “wrong”
choices for our health?

Most of the time it’s because we don’t value ourselves enough. We don’t love ourselves, and suffer from low self worth and lack of confidence. Think about it.
 
Why would you beat your body up and repeat bad habits when you, as a smart woman, deep down know the consequences of your choices? It all starts with you and how you feel about yourself. This is how I can help you in my program. We start from scratch and examine all the areas of your life and where you could use support, so that you automatically will want to eat healthy, move your body, and make the right decisions in order to lead a healthy, vibrant lifestyle.

They think the way they are drudging through the day is “normal” and how it feels like to get “older”. Not so!!

First of all, because I’ve experienced all of the challenges I mentioned above, had exactly the same desires to change and took steps to do something with it. Today I am over the moon happy with this lifestyle, and I want other women to experience these amazing results too! 

I’m a certified Holistic Health Coach through the Institute for Integrative Nutrition, and am also certified in Plant-Based Nutrition through eCornell. I am a NASM certified personal trainer and a Fitness Nutrition Specialist. Additionally, I’m a professionally trained chef and had my own farm to table catering company for five years, and know how to design recipes and make food taste delicious. I turned vegan three years ago, and had to tell my followers of my Norwegian blog that I was no longer going to include recipes based on animal foods. My husband, a meat loving Texan, would have to enjoy his steaks and cheese on his own, and my food centered trips home to Norway, my native country, would be radically altered as a result. So you see, I had a lot to “lose” but in the end, I gained so much more. I dared to make a change, take the risk, and the only thing I was left thinking after I turned vegan was “I wish I had done it sooner.” 
 
Before my career in food and nutrition, I was a wine specialist and an International Marketing Executive for various record labels in the music industry. I know what it is like to be in a stressful, corporate job while traveling constantly with little to no time devoted to myself. Hence, why I am so passionate not only about self care, proper nutrition and a healthy lifestyle, but finding a way of living that makes you come alive, and not just “exist”. 

How can a plant-based diet
help you achieve your goals?

  • It will increase your energy to a level you have never experienced before. This is because of all the vibrant, antioxidant filled fruits, vegetables and legumes you will be eating.
  • Reduces stress. Because plant based foods contain specific nutrients that help reduce mental and emotional stress in the forms of raw vitamins and minerals, your body can use these more easily to fight off stress, just as nature intended it to do.
  • Clear brain fog. So you can become more creative, feel more inspired, and motivated to do all the things you’ve been thinking about but have been too exhausted or overwhelmed to do before.
  • Help you lose weight. If this is your goal, a plant based diet is the best choice because you will eat lots of tasty foods and not need to restrict the amounts the way you’ve had to do on other diets. This is because plant-based foods contain lots of fiber (animal foods contain none), which will help fill you up faster, and keep you fuller longer. Plant based foods are typically lower in calories than animal foods but much more nutrient dense.
  • Reduce cravings. When the body experiences cravings, like that ‘sweet tooth’ that creeps up on you mid-afternoon, it’s because it actually is starving for nutrients. If you’re on a traditional Standard American Diet, you might be severely deficient in vitamins and minerals the body needs to function properly.
  • Elevate your mood. When you eat foods that have “negative” energy such as dead animals who have gone through fear, pain and slaughter before it reaches your plate, you will ingest the same energy yourself. This could, in turn, make you anxious, depressed and feeling down.  It’s easy to see that if you feed your body live foods that are fresh, colorful and vibrant, your mood will be elevated and you will feel energized and ready to tackle any situation much better than when you consume high calorie, cholesterol and saturated-fat driven foods.
  • Contribute to a better world for you and your children. By reducing animal consumption, we in turn help reduce the #1 environmental offender: factory faming.
  • Health on every level: body, mind and soul. By treating yourself with compassion, you will start to want to do the same for others around you. The result is that you will experience less anger, anxiety, stress and depression.

A plant based diet will affect you on every level. You will start to become more conscious of everything around you, and automatically want to become a better person, stretch yourself and see what other great things you are capable of. Not only within your own life and body, but also of those around you. You will feel more alive and more inspired to take action and continue to want to improve. Essentially, embracing a plant based diet is the best form of personal development you can ask for (besides starting your own business!)!
